Homemade Radish Salad with Jeju Radish
Wondering what to make with that wonderful Jeju radish? I decided to make a fresh radish salad! This recipe highlights the natural sweetness and crisp texture of Jeju radishes, combined with a perfectly balanced spicy and savory seasoning. It’s a refreshing side dish that’s incredibly easy to prepare.
Main Ingredients- 1/3 large Korean radish (Mu) (approx. 300-400g)
- A small amount of green onion (approx. 1/4 stalk)
Seasoning- 0.3 Tbsp salt (approx. 5g)
- 0.5 Tbsp tuna extract (or fish sauce) (approx. 7.5ml)
- 0.5 Tbsp minced garlic (approx. 5g)
- 0.5 Tbsp red pepper flakes (Gochugaru) (approx. 5g, adjust to taste)
- 0.2 Tbsp minced ginger (approx. 3g)
- 0.5 Tbsp roasted sesame seeds (approx. 5g)
- 0.5 Tbsp anchovy extract (or fish sauce) (approx. 7.5ml)
- 0.3 Tbsp salt (approx. 5g)
- 0.5 Tbsp tuna extract (or fish sauce) (approx. 7.5ml)
- 0.5 Tbsp minced garlic (approx. 5g)
- 0.5 Tbsp red pepper flakes (Gochugaru) (approx. 5g, adjust to taste)
- 0.2 Tbsp minced ginger (approx. 3g)
- 0.5 Tbsp roasted sesame seeds (approx. 5g)
- 0.5 Tbsp anchovy extract (or fish sauce) (approx. 7.5ml)
Cooking Instructions
Step 1
Thoroughly wash the fresh radish and peel it thinly. Then, slice it thinly (about 0.2-0.3cm thick) into bite-sized pieces or cut it into matchsticks about 5-7cm long. Finely chop the green onion, separating the white and green parts. Combine the sliced radish and chopped green onion in a bowl.
Step 2
Add all the seasoning ingredients (salt, tuna extract, minced garlic, gochugaru, minced ginger, roasted sesame seeds, and anchovy extract) to the bowl with the radish and green onion. Gently mix everything together with your hands, ensuring the seasoning coats the radish evenly. Avoid over-mixing, as this can release too much water and reduce the crispiness. A gentle tossing motion is best.
Step 3
Taste the salad and adjust the seasoning with more salt if needed. The natural sweetness of the radish will beautifully complement the savory and spicy flavors of the seasoning. While delicious immediately, chilling it in the refrigerator for a short while will enhance its crispiness and refreshing taste. It’s a perfect side dish for rice or a great accompaniment to grilled meats.
