Crisp and Savory Cucumber Salad (Oi Muchim)
The Ultimate 15-Minute Cucumber Side Dish Recipe: Refreshing and Mild Oi Muchim
During the summer, it’s crucial to stay hydrated, and incorporating ingredients like cucumbers into your side dishes is a fantastic way to do so. This recipe offers a non-spicy, mild, and nutty cucumber salad that anyone can easily make. Enjoy this delightful Oi Muchim!
Main Ingredients- 3 cucumbers
- 2 Tbsp salt
- 1/2 large green onion
Seasoning- 1 Tbsp minced garlic
- 1.5 Tbsp sesame oil
- 1 Tbsp sesame seeds
- 1 Tbsp minced garlic
- 1.5 Tbsp sesame oil
- 1 Tbsp sesame seeds
Cooking Instructions
Step 1
Wash the cucumbers thoroughly under running water. Gently scrape off the prickly parts of the cucumber skin with the back of a knife; this helps enhance their crispiness.
Step 2
Thinly julienne the cucumbers into bite-sized pieces. Cutting them thinly is important, as thicker pieces may not absorb the seasoning well.
Step 3
Place the julienned cucumbers in a large bowl. Add 2 Tbsp of salt and mix well to coat the cucumbers evenly. Let them sit for about 10 minutes to draw out excess moisture.
Step 4
Once the cucumbers appear translucent and have released water, gently squeeze out as much liquid as possible with your hands. This step is crucial to prevent the salad from becoming soggy and to maintain its crisp texture.
Step 5
Now, let’s add the seasonings. Finely chop 1/2 large green onion. To the squeezed cucumbers, add 1 Tbsp of minced garlic, 1 Tbsp of toasted sesame seeds for a nutty flavor, and 1.5 Tbsp of sesame oil for aroma.
Step 6
Finally, gently toss everything together with your hands until the seasoning is evenly distributed throughout the cucumbers. Be careful not to overmix, as this can make the cucumbers mushy. This Oi Muchim is delicious served immediately, but for an even more refreshing taste, chill it in the refrigerator for a bit before serving.
