Let’s start preparing the ingredients for a delicious Oi Muchim! Wash the fresh cucumbers and onion thoroughly.

Wash the cucumbers well, then slice them into half-moon shapes, about 2-3mm thick. Maintaining a crisp texture is key!

Peel the onion and thinly slice it into strips, similar in thickness to the cucumbers. Slicing them too thick might prevent the seasoning from penetrating well, so be mindful of the thickness.

Add 1/2 Tbsp of salt to the sliced cucumbers and gently mix. Let it sit for about 30 minutes to draw out excess moisture. This step helps keep the cucumbers crisp and prevents them from becoming soggy.
