Main Ingredients- 100g chives
- 1 cucumber
- 1/4 onion
- A little carrot
- 1 Tbsp coarse salt (for washing cucumber)
Seasoning Ingredients- 3 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp fish sauce
- 1 Tbsp minced garlic
- 1 Tbsp plum syrup (or substitute with honey/sugar)
- 0.7 Tbsp sugar (adjust to taste)
- 1 Tbsp toasted sesame seeds
- 3 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp fish sauce
- 1 Tbsp minced garlic
- 1 Tbsp plum syrup (or substitute with honey/sugar)
- 0.7 Tbsp sugar (adjust to taste)
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Prepare the fresh chives by trimming any tough ends. If the chives are about 15cm long, wash them thoroughly under running water about three times. Holding the chives neatly, gently brush your fingers along the blades to remove any dirt or debris.

Drain the washed chives well. Wash the cucumber by gently rubbing it with coarse salt. This process effectively removes impurities from the cucumber’s skin, ensuring a cleaner result.

Cut the cucumber in half lengthwise, then slice it thinly on an angle (as shown in the recipe picture, cutting in half lengthwise and then on the diagonal is recommended). Ensure the chives are completely drained of water before proceeding. Carrots can be added for color and texture, but they are optional.

Slice the prepared vegetables nicely. Thinly julienne the onion and carrot. Slice the cucumber as mentioned in step 2 (lengthwise and then on an angle). Cut the chives into approximately 5cm lengths.
