Main Ingredients

  • 4-5 stalks of fresh scallions (focus on the thicker white parts)

Seasoning Mix

  • 2 Tbsp gochugaru (Korean red pepper flakes)
  • 1/2 Tbsp minced garlic
  • 1/4 Tbsp minced ginger
  • 2 Tbsp fish sauce (or anchovy sauce)
  • 1 Tbsp plum extract (or sugar)
  • 0.5 Tbsp toasted sesame seeds (approx. 1.5 tsp)

Cooking Instructions

Step 1

Start by preparing your fresh scallions. Remove any dirty outer leaves and trim the root ends. Rinse them thoroughly under cold running water and pat them dry.

Step 1

Step 2

Cut the prepared scallions into approximately 5cm (2-inch) lengths. If the white parts are particularly thick, you can slice them in half lengthwise or quarter them to ensure the seasoning penetrates well. The green leafy parts can be left longer.

Step 2

Step 3

In a mixing bowl, combine 2 Tbsp gochugaru, 1/2 Tbsp minced garlic, and 1/4 Tbsp minced ginger. Add 2 Tbsp fish sauce, 1 Tbsp plum extract, and finally, 0.5 Tbsp toasted sesame seeds to create your flavorful seasoning mix.

Step 3

Step 4

Gently add the seasoning mix to the prepared scallions. Toss carefully to coat the scallions evenly without breaking them. It’s important to mix with a light hand to preserve their crispness.

Step 4

Step 5

Your Scallion Kimchi is delicious right away, but for an even more enhanced flavor, let it sit at room temperature for about a day. This allows the flavors to meld beautifully. Enjoy the crisp texture and the wonderfully refreshing, slightly spicy taste!
