This is my mom’s special recipe! We stir-fry Korean green peppers just enough to keep them crisp and crunchy, paired with perfectly crispy anchovies. The seasoning is mild and balanced, making it an excellent side dish for rice that isn’t too salty. Enjoy this delightful and flavorful dish!

Ingredients

  • Korean green peppers (to your preference)
  • Anchovies (to your preference; dried small anchovies or larger ones for broth work well)
  • Cooking oil (for stir-frying)
  • 1 Tbsp minced garlic
  • 2 Tbsp soy sauce
  • 3 Tbsp cooking wine (mirin or sake)
  • 1 Tbsp honey (or corn syrup)
  • 1 Tbsp sesame oil
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

First, wash the Korean green peppers thoroughly and pat them dry. Remove the stems. If the peppers are large, you can cut them in half. Heat 1-2 tablespoons of cooking oil in a frying pan over medium heat. Add the green peppers and stir-fry them briefly, just enough to make them slightly tender but still crisp. Be careful not to overcook them, or they will become mushy.

Once the green peppers are lightly stir-fried, add 1 tablespoon of minced garlic to the pan and continue to stir-fry until fragrant.

Pour in 2 tablespoons of soy sauce and stir-fry quickly to coat the peppers and garlic. Keep an eye on the heat to prevent the soy sauce from burning.

Add 3 tablespoons of cooking wine (mirin or sake) to eliminate any fishy smell and enhance the flavor. Then, add the prepared anchovies and stir-fry with the peppers and garlic until the anchovies become crispy. Stir continuously to prevent the anchovies from sticking to the pan.

When the anchovies are sufficiently crispy, add 1 tablespoon of honey (or corn syrup). Stir well to coat everything evenly and cook until a glossy sheen develops. Honey adds a natural sweetness and appealing glaze.
