Ingredients

  • 1 fresh carrot
  • 1 Tbsp extra virgin olive oil
  • 1/2 Tbsp whole grain mustard
  • 1 Tbsp fresh lemon juice
  • 1/2 Tbsp oligosaccharide (or honey)
  • 5g fine salt

Cooking Instructions

Step 1

Wash the fresh carrot thoroughly. For the best flavor and crisp texture, it’s important to julienne the carrot as thinly as possible. Thinner shreds will absorb the dressing better, making the rapé even more delicious.

Step 1

Step 2

Lightly salt the julienned carrots. Be careful not to add too much salt, as it can make the rapé too salty later! Sprinkle the salt lightly over the top of the carrots, toss gently, and let them sit for about 5 minutes. After salting, gently squeeze out any excess moisture.

Step 3

Now, let’s make the flavorful dressing. In a bowl, combine 1 Tbsp of extra virgin olive oil, 1/2 Tbsp of whole grain mustard, 1 Tbsp of fresh lemon juice, and 1/2 Tbsp of oligosaccharide (or honey). Mix well. If you prefer a tangier flavor, you can add an extra 1/2 Tbsp of lemon juice or vinegar.

Step 3

Step 4

You can enjoy the carrot rapé immediately, but it’s even more delicious if you let it chill in the refrigerator for about a day. The flavors will meld beautifully! It’s perfect for when you have a lack of appetite. A great tip: use less dressing and add the carrot rapé to your sandwiches for a healthy and tasty twist!
