How to Make Delicious Stir-Fried Chives
While chives are delicious with meat, I often enjoy them as a simple side dish. Chives are beneficial for health, and their versatility in cooking makes them a wonderful ingredient. This recipe offers a quick and healthy way to enjoy them, with a delightful balance of sweet, tangy, and spicy flavors and a satisfying crisp texture.
Main Ingredients for Stir-Fried Chives- 65g fresh chives
- 50g onion (about 1/4 medium onion)
- 45g carrot (about 1/5 medium carrot)
- 0.5 Tbsp minced garlic
- A pinch of toasted sesame seeds (for garnish)
Sweet and Spicy Chive Seasoning- 0.5 Tbsp gochugaru (Korean chili flakes)
- 0.5 Tbsp brown sugar
- 0.5 Tbsp plum extract
- 1.5 Tbsp soy sauce
- 1 Tbsp sesame oil
- 0.5 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions
Step 1
Begin by washing the fresh chives thoroughly under running water. Inspect them and remove any wilted or dirty leaves for a cleaner presentation.
Step 2
Trim the washed chives and cut them into approximately 5cm lengths. Thinly julienne the onion and carrot into pieces similar in length to the chives. Prepare 0.5 Tbsp of minced garlic. For easier julienning, you can use a grater.
Step 3
In a small bowl, combine all the seasoning ingredients. Add 1.5 Tbsp soy sauce, 0.5 Tbsp plum extract, 0.5 Tbsp brown sugar, 0.5 Tbsp gochugaru, and 1 Tbsp sesame oil. Stir well with a spoon until the sugar is dissolved and the sauce is well combined.
Step 4
Add the julienned carrot and onion, along with the minced garlic, to the bowl with the seasoning. Gently toss with a spoon until the vegetables are evenly coated with the sauce. Be careful not to mash the vegetables; a gentle mix is key.
Step 5
Now, add the prepared chives to the bowl with the seasoned vegetables. To maintain the chives’ crisp texture, avoid overmixing. Lightly toss the chives with the seasoning, just enough to coat them without wilting them significantly.
Step 6
Finally, transfer the stir-fried chives to a serving plate. Sprinkle generously with toasted sesame seeds for a nutty aroma and appealing finish. Your delicious and crisp Buchu Muchim is ready to be enjoyed with a warm bowl of rice!
