Nutritious Cucumber and Chive Salad!
I made a cucumber salad using nutritious chives and white cucumbers. This is a cucumber salad that can be stored for a long time.
Ingredients- 10 White cucumbers
- 1 bunch Nutritious chives
- 2 Tbsp Salt (for salting cucumbers)
Seasoning- 4 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Minced garlic
- 4 Tbsp Anchovy sauce
- 1 Tbsp Saeujeot (fermented shrimp paste, finely minced)
- 1.5 Tbsp Sugar (adjust to your taste)
- A little Toasted sesame seeds
- 4 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Minced garlic
- 4 Tbsp Anchovy sauce
- 1 Tbsp Saeujeot (fermented shrimp paste, finely minced)
- 1.5 Tbsp Sugar (adjust to your taste)
- A little Toasted sesame seeds
Cooking Instructions
Step 1
First, wash the white cucumbers thoroughly by rubbing them with a soft scrubber or coarse salt to remove any dirt or impurities.
Step 2
Trim any wilted or yellowed leaves from the nutritious chives and wash them clean. Gently shake off excess water. Cut them into pieces roughly the same length as the cucumbers for a visually appealing presentation.
Step 3
Cut the clean white cucumbers in half lengthwise. Then, chop them into 3-4 cm (about 1.5 inches) pieces. Cutting them not too thinly will help maintain their crispness and prevent them from becoming mushy.
Step 4
Add 2 tablespoons of coarse salt (medium grain) to the chopped cucumbers and mix well. Let them salt for about 30 to 40 minutes until they soften slightly and release their water. Rinse the salted cucumbers once under cold running water to remove excess salt, then drain them thoroughly in a colander. Ensure as much water as possible is removed; excess moisture can make the salad taste diluted.
Step 5
Now, let’s make the delicious seasoning! In a bowl, combine 4 tablespoons of gochugaru, 2 tablespoons of minced garlic, 4 tablespoons of anchovy sauce, 1 tablespoon of finely minced saeujeot, and 1.5 tablespoons of sugar. Mix well. You can adjust the sweetness to your preference by adding more or less sugar after tasting.
Step 6
Add the drained cucumbers to the bowl with the seasoning. Gently toss everything together until the seasoning is evenly distributed over the cucumbers. Be careful not to overmix, as this can make the cucumbers mushy.
Step 7
After tossing the cucumbers with the seasoning, add the prepared nutritious chives. Gently mix them in, as chives wilt quickly. Treat the chives delicately, as if you were handling a baby, to preserve their fresh flavor and crisp texture.
