Craving freshly made Kkakdugi? No need to wait! This recipe makes a small batch quickly, perfect for enjoying its crisp, refreshing taste even without fermentation. It’s an ideal side dish for lunchboxes!
Main Ingredients- 1 small Korean radish
- 1 Tbsp coarse sea salt
Seasoning- 1/4 pear (use half)
- A little minced garlic (to taste)
- 1.5 Tbsp red pepper flakes
- 1 Tbsp fermented anchovy sauce

Cooking Instructions
Step 1
Wash the small radish thoroughly. Then, cut it into bite-sized cubes (about 2-3 cm). Cutting them too large will take longer to cook, and too small might make them mushy, so aim for a moderate size.
Step 2
Add 1 tablespoon of coarse sea salt to the cubed radish and mix well. Salting draws out moisture, which helps keep the radish crisp and seasons it. Let it sit for about 1 hour to brine. While the radish is brining, let’s make the seasoning!
Step 3
Prepare the ingredients for the seasoning. Use half of the quartered pear and mince the garlic. The pear adds sweetness and a refreshing taste, while the garlic enhances the flavor. (Adjust the amount of garlic to your preference.)
Step 4
Using a blender or grater, finely blend the pear and minced garlic. (Blending them smoothly helps the seasoning permeate better for a milder taste.) Place the blended pear and garlic in a bowl. Add 1.5 tablespoons of red pepper flakes and 1 tablespoon of fermented anchovy sauce.
Step 5
Combine all the ingredients in the bowl and stir well to create a delicious Kkakdugi seasoning. Using fermented anchovy sauce will add a richer umami flavor.
Step 6
DO NOT rinse the radish after brining for 1 hour! Rinsing will wash away all the salt. Drain the brined radish in a colander for about 10 minutes to remove excess water. This step prevents the Kkakdugi from becoming too bland or mushy.
Step 7
Add the drained radish to the bowl with the seasoning. It’s time for it to transform into delicious Kkakdugi!
Step 8
Gently mix the radish and seasoning until evenly coated. Be careful not to mash the radish by mixing too vigorously. Voila! Your beautiful, appetizing Kkakdugi is ready. It’s delicious to eat right away, or you can refrigerate it for a cool, refreshing taste.
