Main Ingredients- 5 Korean pickled cucumbers (Oiji)
- 1/3 stalk of green onion
Seasoning- 3 Tbsp plum extract (Maesil-cheong)
- 2 Tbsp perilla oil (Deul-gireum)
- 1 Tbsp minced garlic
- Generous amount of sesame seeds

Cooking Instructions
Step 1
Prepare all the ingredients. Have your fresh pickled cucumbers and fragrant green onion ready.
Step 2
Thinly slice the pickled cucumbers into half-moon shapes. Finely mince the white parts of the green onion. (If slicing is difficult, you can refer to the video tutorial for easier steps.)
Step 3
Soak the sliced pickled cucumbers in cold water for about 10 minutes. This step helps to gently remove excess saltiness, making the cucumbers more tender and delicious.
Step 4
After soaking, drain the cucumbers and rinse them lightly under running water a couple of times. Then, firmly squeeze out all the excess water. Ensuring the cucumbers are well-drained is key for the dressing to adhere properly and absorb well.
Step 5
In a bowl with the squeezed cucumbers, add the minced green onion, 3 tablespoons of plum extract, 2 tablespoons of perilla oil, 1 tablespoon of minced garlic, and a generous amount of sesame seeds. You can adjust the seasoning to your preference.
Step 6
Gently mix and massage the ingredients with your hands until the dressing is evenly distributed and coats the cucumbers. Be careful not to mix too vigorously, as this can break down the cucumbers. Your delicious Oiji Muchim is now complete! Enjoy it with a bowl of warm rice!
