How to Make Chives and Bean Sprout Salad That Stays Fresh Without Water!
A delicious side dish that tastes great even after being stored for a long time. This recipe ensures your salad remains fresh and flavorful, perfect for meal prepping.
Main Ingredients- 1 bag Bean Sprouts (approx. 200g)
- 1 bunch Chives (approx. 100g)
Seasoning Ingredients- 1 Tbsp minced garlic
- 1/2 Tbsp salt (adjust to taste)
- 1/3 Tbsp sugar (adjust sweetness to taste)
- 2 pinches black pepper
- 1/2 Tbsp sesame oil
- Sesame seeds, a pinch

Cooking Instructions
Step 1
First, rinse the bean sprouts 2-3 times under running water to remove any dirt. Drain them well and place them in a pot for blanching.
Step 2
Do not add any water to the pot with the bean sprouts. Cover tightly with a lid and cook over low heat for exactly 10 minutes. Cooking with the lid on without adding water helps maintain the bean sprouts’ crispiness.
Step 3
While the bean sprouts are cooking, wash the chives thoroughly under running water to remove any soil or debris.
Step 4
Cut the washed chives into bite-sized pieces. About two finger-widths in length is a convenient size for mixing.
Step 5
Spread the cut chives on a colander or sieve to allow any excess water to drain and to let steam escape.
Step 6
After 10 minutes, carefully open the lid of the pot. The bean sprouts will be steaming hot and perfectly cooked.
Step 7
Immediately pour the steaming hot bean sprouts over the prepared chives. The residual heat from the bean sprouts will gently wilt the chives.

Using two chopsticks, gently toss the hot bean sprouts and chives together. The heat from the bean sprouts will cook the chives just enough to soften them while keeping them pleasantly crisp. Be careful not to overmix, as this can mash the bean sprouts.

Now, add all the seasoning ingredients to the bean sprout and chive mixture. Add the minced garlic, salt (or soy sauce), sugar, pepper, and sesame oil, and mix gently.

Gently mix everything together with chopsticks or a spatula, allowing the seasoning to coat the bean sprouts and chives evenly. The warmth from the bean sprouts helps the flavors meld beautifully.
