Main Ingredients- 1 bag Bok Choy (approx. 200-300g)
- 1/2 Tbsp Coarse Salt (for blanching)
Seasoning Ingredients- 1 Tbsp Soup Soy Sauce (Guk-ganjang)
- 1 Tbsp Perilla Oil (Deulkireum)
- 1 Tbsp Toasted Sesame Seeds (or ground sesame seeds)

Cooking Instructions
Step 1
Wash the bok choy thoroughly. Trim the very end of the base and cut the stalks into bite-sized pieces, about 4-5 cm long. Remove any wilted or damaged outer leaves for a clean preparation.
Step 2
Fill a pot with plenty of water and bring it to a rolling boil. Once boiling, add the coarse salt and stir to dissolve. Adding salt helps to keep the bok choy vibrant in color and maintain its crisp texture.
Step 3
When the water is boiling vigorously, add the prepared bok choy. It’s best to place the tougher, root end into the boiling water first, allowing it to cook evenly.
Step 4
Blanch the bok choy for a very short time, between 30 seconds and a maximum of 1 minute. Blanching for too long will cause the bok choy to lose its crispness and become mushy, affecting the taste. Aim to blanch it lightly for just about 30 seconds.
Step 5
Immediately after blanching, rinse the bok choy under cold running water to stop the cooking process and cool it down. Then, gently squeeze out as much water as possible using both hands. Removing excess water is crucial to prevent the dressing from becoming watery and ensure the flavors meld well.
Step 6
Place the squeezed bok choy into a large mixing bowl. Add 1 tablespoon of soup soy sauce for seasoning. Soup soy sauce adds a savory depth characteristic of namul dishes.
Step 7
Now, add 1 tablespoon of perilla oil for a nutty aroma and 1 tablespoon of toasted sesame seeds (or ground sesame seeds) for texture and flavor. All the seasonings are ready!
