Main Ingredients- 1 mini pumpkin
- 4 walnuts
- 10 almonds
- 15-20 pumpkin seeds
Pumpkin Salad Dressing (Measurements: Tablespoons)- 4 Tbsp unsweetened plain yogurt
- 2 Tbsp allulose syrup
- Pinch of salt

Cooking Instructions
Step 1
First, wash the pumpkin thoroughly under running water. Place it in a microwave-safe bowl and add about 1-2 tablespoons of water at the bottom. Position the pumpkin with the stem facing down, cover with plastic wrap, and poke 2-3 holes with a fork to allow steam to escape.
Step 2
Microwave the pumpkin for at least 5 minutes. After microwaving, check for doneness by piercing it with a chopstick; it should slide in easily if cooked. Carefully remove the hot pumpkin and let it cool slightly.

Roughly chop the walnuts. You can also chop the almonds if desired. The pumpkin seeds can be left whole.

Once the pumpkin has cooled slightly, cut it in half. Scoop out the seeds and stringy bits with a spoon. If the rind is tough, you can peel it off using a knife or peeler. You can leave the skin on if you prefer, but removing it will result in a softer texture.

Using a fork, mash the pumpkin flesh, leaving some small chunks for texture. Avoid mashing it into a completely smooth paste. Add the chopped walnuts, almonds, and pumpkin seeds to the mashed pumpkin and mix well.

Now, let’s add the dressing ingredients. Stir in 2 tablespoons of allulose syrup and 4 tablespoons of unsweetened plain yogurt. You can adjust the consistency of the salad by adding more yogurt if you desire a smoother, mousse-like texture.
