I made this sweet potato salad, also known as sweet potato mousse, using sweet potatoes kindly gifted by my mother-in-law during Chuseok. It’s perfect as a dessert or a snack.

Ingredients

  • 3 steamed sweet potatoes (approx. 328g after preparation)
  • 1 Tbsp honey
  • 3.5 Tbsp mayonnaise
  • 0.4 Tbsp honey mustard sauce
  • 10 almonds (for topping, optional)

Cooking Instructions

Step 1

Begin by thoroughly washing the sweet potatoes. Scrub each sweet potato under running water to remove any dirt, then rinse them again under running water. This ensures they are clean and free of debris.

Place a steamer basket inside a pot and add 600-700ml of water. Arrange the washed sweet potatoes in the steamer basket and cover the pot with a lid. Place the pot on the stove over high heat to begin steaming.

Once steam starts to escape from around the lid, reduce the heat to medium or medium-low. Steam the sweet potatoes for approximately 25-30 minutes. The steaming time may vary depending on the size of the sweet potatoes. To check for doneness, insert a chopstick into a sweet potato; if it goes in easily, they are fully cooked.

While the sweet potatoes are still warm, carefully cut off the pointed end and peel off the skin. If the skin is difficult to remove, you can steam them a little longer or carefully slice it off with a knife.

Once peeled, cut the warm sweet potatoes into manageable pieces to make them easier to mash. Place all the cut sweet potato pieces into a large bowl. This step will make the mashing process much smoother.

Using a fork, mash the warm sweet potatoes until smooth. Be careful as they are hot. Ensure there are no lumps for a truly creamy texture. For an even smoother mousse-like consistency, you can pass the mashed sweet potato through a sieve.

Add 3.5 tablespoons of mayonnaise to the mashed sweet potatoes. Mayonnaise adds creaminess and enhances the overall flavor.
