Main Ingredients

  • 1/2 cup cooked cocktail shrimp (peeled and deveined)
  • 6 fresh shiitake mushrooms
  • 4 cloves garlic
  • 1/4 fresh onion
  • 160g spaghetti pasta (for 1-2 servings)
  • 1 Tbsp white wine
  • 1 Tbsp extra virgin olive oil
  • A pinch of dried parsley (for garnish)
  • A pinch of coarse black pepper
  • A pinch of salt (to taste)

Cream Sauce Ingredients

  • 200ml fresh milk
  • 250g heavy cream

Cooking Instructions

Step 1

First, let’s prepare the fresh ingredients. Clean and slice the shiitake mushrooms about 0.5cm thick. Thinly slice the garlic cloves (mince if preferred for a stronger flavor). Peel and thinly slice the onion into roughly 0.5cm wide strips. For the cocktail shrimp, briefly blanch them in boiling water for about 30 seconds to 1 minute. Drain them and rinse under cold water, then thoroughly pat dry. This step ensures the shrimp remain tender and flavorful.

Step 1

Step 2

Place a deep pot on the large burner of your Cuckoo electric stove and fill it generously with water. Once the water comes to a rolling boil, add about 1 tablespoon of salt. Carefully add the spaghetti pasta, ensuring it doesn’t clump together. Use tongs or a fork to gently stir and separate the strands as they cook. Boil for approximately 10 minutes, or according to package directions for al dente. (It’s important not to rinse pasta with cold water after boiling, as this removes the starch that helps the sauce cling to the noodles!) Once cooked, drain the pasta in a colander and set aside.

Step 3

Now, let’s create the luscious cream sauce. Heat the pan over medium heat and add a generous amount of olive oil. Add the sliced garlic and onion, sautéing until fragrant and the onion becomes translucent. Next, add the sliced shiitake mushrooms and cook for another minute or two until they soften slightly. Reduce the heat to low, then pour in the mixture of milk and heavy cream. Stir gently and let the sauce simmer for about 3-4 minutes, allowing it to thicken slightly to a velvety consistency.

Step 3

Step 4

Add the drained spaghetti pasta, blanched cocktail shrimp, and white wine to the simmering cream sauce. Stir everything together until the pasta and shrimp are well coated with the sauce. Taste and season with salt as needed. Transfer the finished pasta to a serving plate. Garnish with a sprinkle of dried parsley and coarse black pepper for a beautiful presentation. Enjoy your delicious homemade shrimp cream pasta!
