Ingredients

  • 200ml Milk
  • 100ml Heavy Cream
  • 1 serving Udon Noodles (fresh or frozen)
  • 3 strips Bacon
  • 2 Shiitake Mushrooms
  • 4 cloves Garlic
  • 2 Tbsp Olive Oil
  • Pinch of Salt
  • Pinch of Black Pepper
  • Cayenne Pepper (optional)
  • Young Green Leaves or Sprouts (for garnish)
  • 1 Egg Yolk (for richness)

Cooking Instructions

Step 1

Begin by preparing your ingredients for a smooth cooking process. Thinly slice the garlic cloves and the shiitake mushrooms. Cut the bacon strips into bite-sized pieces, about 1 cm wide.

Step 1

Step 2

Heat a wide pan over medium-low heat and add 2 tablespoons of olive oil. Add the sliced garlic and sauté gently until fragrant and lightly golden. Be careful not to burn the garlic, as this can make it bitter.

Step 2

Step 3

Once the garlic is aromatic, add the sliced bacon and shiitake mushrooms to the pan. Cook, stirring occasionally, until the bacon is nicely browned and the mushrooms are tender and have released some of their moisture. This step builds a flavorful base.

Step 3

Step 4

Pour in 200ml of milk and 100ml of heavy cream. Increase the heat to medium and bring the mixture to a gentle simmer, stirring constantly to prevent scorching. Allow the sauce to thicken slightly.

Step 4

Step 5

When the sauce is simmering, add the udon noodles (frozen or fresh) directly into the pan. Use chopsticks or a fork to gently separate the noodles and ensure they are fully submerged in the sauce. Cook for about 2-3 minutes, or until the noodles are tender and have absorbed some of the creamy sauce.

Step 5

Step 6

Taste the sauce and season with a pinch of salt and freshly ground black pepper. Adjust the seasoning as needed, keeping in mind the saltiness of the bacon. A little pepper will enhance the overall flavor profile.

Step 6

Step 7

Transfer the creamy udon to a serving bowl. For a touch of heat, sprinkle a little cayenne pepper or chili flakes according to your preference. Gently place a fresh egg yolk in the center and garnish with a sprinkle of young green leaves or sprouts for a fresh finish. Enjoy your delicious, homemade one-pan udon!
