Ingredients- 200g Salmon fillet (thick cut)
- Pinch of salt (to taste)
- Pinch of black pepper (freshly ground recommended)
- 3 Tbsp Olive oil (extra virgin preferred)
- 1/4 tsp Minced garlic
- 6 Cherry tomatoes (halved)
- 1 bunch Baby spinach (rinsed and patted dry)
- 1/2 cup Heavy cream (whipping cream or cooking cream)
- 2 Tbsp Grated Parmesan cheese
- Squeeze of fresh lemon juice (for finishing)
Cooking Instructions
Step 1
Start by ensuring your salmon is perfectly prepped. Gently pat the salmon fillet dry with paper towels. This crucial step helps achieve a beautiful sear and a moist interior. Season both sides generously with salt and freshly ground black pepper according to your preference.
Step 2
Heat the olive oil in a skillet over medium heat. Once the oil is shimmering, carefully place the seasoned salmon into the pan. Sear for about 2-3 minutes per side, or until golden brown. The goal here is to create a lovely crust while keeping the inside tender and juicy. Avoid overcooking at this stage; we’re just building flavor and texture.
Step 3
Remove the salmon from the skillet and set it aside on a plate. In the same skillet, add the minced garlic and sauté until fragrant, being careful not to burn it. Then, add the halved cherry tomatoes and cook until they begin to soften. Finally, toss in the baby spinach and cook just until it wilts.
Step 4
Return the salmon to the skillet with the sautéed vegetables. Pour in the heavy cream and sprinkle with grated Parmesan cheese. Let it simmer gently over medium-low heat for about 2 minutes, allowing the sauce to thicken slightly and coat the salmon beautifully. Just before serving, add a squeeze of fresh lemon juice to brighten the flavors and cut through the richness. This brightens the dish and complements the salmon perfectly. Enjoy your delicious, creamy salmon steak!
