  • 2 medium potatoes
  • 1/2 stalk of green onion (white parts mainly)
  • 1 cup of kelp-infused water (or anchovy-kelp broth)
  • A pinch of toasted sesame seeds (for garnish)
  • 1 Tbsp cooking oil
  • Salt to taste
  • Black pepper to taste

Cooking Instructions

Step 1

Prepare the kelp-infused water by soaking a piece of dried kelp in 1 cup of water for about 10 minutes to extract its umami flavor. Using anchovy-kelp broth will add even more depth to your soup.

Step 2

Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the finely chopped green onions and sauté gently until fragrant. Be careful not to burn the onions; lightly browning them enhances their sweetness.

Step 3

Once the green onions are aromatic, add the potatoes, peeled and diced into small 1cm cubes. Sauté them together with the green onions. Coating the potatoes in oil as they cook will help them become tender.

When the potatoes are lightly sautéed, pour in the prepared kelp-infused water. Cover the pan and simmer over medium-low heat until the liquid has reduced and is just coating the ingredients. This process allows the potatoes to cook until tender and the flavors to concentrate.

Once the liquid has mostly reduced, season with salt and black pepper to your liking. The natural sweetness of the potatoes will combine with the seasoning to create a wonderfully mild and savory flavor.

Add the 2 bowls of warm, cooked rice to the pan. Gently stir and mix with a spatula until the rice is well combined with the potato mixture. Ensure the rice grains are separated and evenly distributed.
