Don’t throw away those potatoes that are just starting to sprout or are about to! Potato soup is a fantastic way to use up excess potatoes. This recipe shows you how to make a wonderfully flavorful soup using just milk and onions you likely have at home, without any heavy cream. Serve it with some crusty bread for a truly satisfying meal. It’s perfect for a light lunch or a comforting starter.
Main Ingredients- 2 medium potatoes
- 1/2 medium onion
- 1 Tbsp butter
- 1 cup milk (200ml)
- 1/3 tsp minced garlic
- Salt to taste
- Pepper to taste
- A little cooking oil

Cooking Instructions
Step 1
First, wash the two potatoes thoroughly, peel them, and cut them into roughly 1.5cm cubes. Place the cubed potatoes in a microwave-safe bowl, add 3 tablespoons of water and 1 teaspoon of salt, mix well. Cover the bowl or wrap it with plastic wrap, poking a few holes. Microwave on the ‘potato cooking’ or ‘vegetable steaming’ setting (or for 5-7 minutes at 700W) until the potatoes are tender. (Adjust the cooking time as needed based on how the potatoes cook.)
Step 2
Once the potatoes are cooked, use a potato masher or the back of a ladle to mash them into a smooth puree. Mashing them thoroughly without any lumps will result in a silkier soup texture.
Step 3
Peel the half onion, trim off the ends, and thinly slice it. Aim for about 0.5cm thickness.

Heat a pan over medium-low heat with a tiny drizzle of cooking oil. Add the thinly sliced onions and sauté until they become translucent. Once the onions start to soften, add 1 tablespoon of butter.

As the butter melts, stir the onions frequently to prevent them from sticking to the pan. Continue to cook over low heat, stirring gently, until the onions turn a golden brown color and become caramelized. This process deepens their natural sweetness and enhances their flavor significantly.

Once the onions are beautifully caramelized, transfer them to a blender or use an immersion blender. Add the mashed potatoes, 1/3 teaspoon of minced garlic, and 1 cup of milk. Blend until the mixture is completely smooth and creamy. (If using an immersion blender, you can blend directly in the pot.)

Pour the smooth potato-onion purée into a saucepan. Add more milk as needed to reach your desired soup consistency (about 1/2 to 1 extra cup). Gently heat the soup over low heat, stirring constantly. Once it begins to simmer, reduce the heat and let it cook for another 1-2 minutes. Finally, season with salt and pepper to taste. Add seasonings gradually, tasting as you go.

For the optional croutons, cut the slice of bread into bite-sized cubes. Heat a dry skillet over medium-low heat (no oil needed). Add the bread cubes and toast them, turning occasionally, until they are golden brown and crispy on all sides. These croutons will add a delightful crunch to your soup.
