Creamy Potato Salad with Zesty Tartar Sauce

Among the abundant produce available, pumpkins, kiwis, onions, and carrots stand out for their delicious taste and excellent quality. Potatoes, in particular, are exceptionally flavorful and packed with nutrients, making them a staple in my kitchen. Today, I’ve prepared a slightly modernized, fusion-style potato salad, a delightful departure from the traditional, evoking nostalgic flavors with a contemporary touch.

  • Category : Salad
  • Ingredient Category : Vegetables
  • Occasion : Everyday
  • Cooking : Boiled
  • Servings : 2 servings
  • Cooking Time : Within 10 minutes
  • Difficulty : Anyone

Ingredients (Serves 2)

  • 1-2 Potatoes
  • 2-3 Sausages
  • 2-2.5 Tbsp Tartar Sauce
  • Pinch of Salt
  • Pinch of Pepper
  • Arugula for garnish

For the Tartar Sauce

  • 1 Egg
  • 1/4 Onion
  • 4 Tbsp Mayonnaise
  • 2 tsp Vinegar
  • Pinch of Sugar (optional)
  • 1 Tbsp Chopped Fresh Parsley (optional, dried parsley can be used)

Cooking Instructions

Step 1

First, prepare the parsley for the tartar sauce. If you have fresh parsley, mince it finely. If not, you can use dried parsley flakes. Adding a little salt, pepper, and a pinch of sugar (if desired) can enhance the overall flavor profile.

Step 1

Step 2

Finely mince the onion, which is a key component of the tartar sauce. To mellow its pungency, you can soak the minced onion in cold water for about 5 minutes, then drain it thoroughly.

Step 2

Step 3

Mash the hard-boiled egg thoroughly using a fork or a masher. Combine the mashed egg with the finely minced onion and mix well.

Step 3

Step 4

To the mashed egg and onion mixture, add 4 tablespoons of mayonnaise and 2 teaspoons of vinegar. Mix everything together until smooth. Season with salt and pepper to taste, and add a little sugar if you prefer. Stir in the chopped fresh parsley (or dried parsley flakes) for a visually appealing and aromatic tartar sauce. For best results, prepare the sauce in advance and let it chill in the refrigerator.

Step 4

Step 5

Peel the potatoes, the star ingredient of the salad, and cut them into bite-sized cubes, approximately 2 cm in size.

Step 5

Step 6

Rinse the cubed potatoes in cold water for a short period to remove excess starch. This step helps in achieving a smoother texture when the potatoes are cooked.

Step 6

Step 7

Place the rinsed potato cubes in a microwave-safe bowl, cover with plastic wrap or a lid, and microwave for about 3 minutes. The cooking time may vary depending on your microwave’s power and the potato size. Check for tenderness by piercing with a fork; they should be soft.

Step 7

Step 8

Slice the sausages into bite-sized pieces, similar in size to the potato cubes. Place the sausage pieces in a microwave-safe container and microwave for about 1 minute, just like the potatoes, to warm them through.

Step 8

Step 9

In a large bowl, combine the warm, cooked potatoes and sausages. Add 2 to 2.5 tablespoons of the prepared tartar sauce. Gently mix everything together, seasoning with salt and pepper as needed, until the potatoes are evenly coated. Be careful not to mash the potatoes while mixing.

Step 9

Step 10

Arrange a bed of fresh arugula leaves on your serving plate. The slight peppery note of the arugula complements the creamy potato salad beautifully.

Step 10

Step 11

Finally, spoon the tartar sauce-coated potato and sausage mixture onto the arugula. This delightful fusion potato salad, with its blend of comforting and zesty flavors, is perfect as a simple side dish or an impressive appetizer for guests.
