Filling Ingredients

  • 70ml milk
  • 50ml heavy cream
  • 2 tbsp grated Parmesan cheese
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 2 boneless, skinless chicken thigh pieces, cut into bite-sized pieces
  • 1/2 onion, finely chopped
  • 4-5 button mushrooms, thinly sliced
  • 3-4 small broccoli florets
  • Shredded mozzarella cheese (optional)
  • 100g shredded cheddar cheese

Cooking Instructions

Let’s start by making the quiche crust. Sift the all-purpose flour into a large bowl. This step helps to create a lighter, more tender crust.

Create a well in the center of the flour and add the egg yolk, salt, and ice water. Add the cold, cubed butter. Using a pastry blender, knife, or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs. Work quickly to prevent the butter from melting.

Gather the crumbly mixture into a cohesive ball of dough. Wrap it tightly in plastic wrap, flatten it into a disc, and refrigerate for at least 1 hour. This chilling period allows the gluten to relax, making the dough easier to roll out.

Once chilled, place the dough on a lightly floured surface and roll it out evenly with a rolling pin to a thickness of about 0.3 cm.

Before baking, prick the bottom of the chilled crust all over with a fork. This helps prevent puffing during baking. Preheat your oven to 180°C (350°F) and bake the crust for 12-15 minutes, or until lightly golden. This initial bake is called ‘blind baking’.
