A delightful noodle dish made with nutrient-rich lentils and creamy walnuts. This recipe offers a smoother, more flavorful alternative to traditional soybean noodle soup, perfect for a light yet filling meal.
Ingredients- 100g Lentils (any variety)
- 30g Walnuts
- 350ml Milk (dairy or non-dairy)
- 1 pinch Salt
- 80g Thin wheat noodles (Somen)
Cooking Instructions
Step 1
First, rinse the 100g of lentils thoroughly under running water to remove any dust or debris. Ensure they are well-rinsed.
Step 2
Bring a pot of water to a boil. Once boiling, add the rinsed lentils. Reduce the heat to medium-low and simmer for about 20 minutes, or until the lentils are very soft and easily mashed.
Step 3
Drain the cooked lentils completely using a colander. Letting out any excess water is key for achieving the right consistency for the soup base.
Step 4
In a blender, combine the drained lentils, 30g of walnuts for a nutty flavor, 350ml of milk for creaminess, and a pinch of salt to balance the taste. Blend until completely smooth and creamy. Aim for a velvety texture without any lumps.
Step 5
Now, it’s time to cook the noodles. Bring a pot of water to a rolling boil and add a pinch of salt. Add the 80g of somen noodles and stir gently with chopsticks to prevent them from sticking together.
Step 6
Once the noodles are cooked al dente, immediately drain them and rinse thoroughly under cold running water. This step removes excess starch, enhances the chewy texture, and cools the noodles. Drain them very well to remove all excess water.
Step 7
Arrange the drained noodles attractively in serving bowls.

Finally, pour the rich and savory lentil soup base generously over the noodles. Your delicious Lentil Kongguksu is ready to be enjoyed! You can garnish with cucumber slices or cherry tomatoes for extra freshness if desired.
