Ryu Soo-young’s Recipe: Easy & Delicious Potato Soup to Make at Home
This is a delicious potato soup recipe introduced by Ryu Soo-young on the show ‘PyunStaurant’. Enjoy a comforting and flavorful soup made easily at home.
Ingredients- 4 medium potatoes
- 1 leek (white and light green parts)
- 1 liter (about 4 cups) water
- 30g butter (about 2 tablespoons)
- 125ml heavy cream (about 1/2 cup)
- 125ml milk (about 1/2 cup)
- 4 slices cheddar cheese
- Parmesan cheese (to taste)
Cooking Instructions
Step 1
Start by preparing the 4 medium potatoes. Since we’ll be using them with the skin on, scrub them thoroughly with baking soda or coarse salt to remove any dirt or impurities. Leaving the skin on adds nutrients and enhances the potato’s flavor.
Step 2
To speed up the cooking process, slice the potatoes into very thin julienne strips. This thin slicing will help the potatoes cook much faster and result in a smoother, creamier soup when blended.
Step 3
In a deep pot, combine 1 liter of water with the thinly sliced potatoes and 1 leek, chopped into bite-sized pieces. While onions are common, using leeks, as suggested by Ryu Soo-young, adds a wonderful depth of savory flavor. Bring the mixture to a boil over high heat, then reduce to medium-low and simmer until the potatoes are completely tender.
Step 4
Once the potatoes are fully cooked and tender, add 30g of butter to the pot. The butter will melt and contribute significantly to the soup’s rich and creamy texture.
Step 5
Now, add 125ml of heavy cream and 125ml of milk to enhance the soup’s velvety smoothness. Stir well and continue to simmer over medium-low heat for about 5 minutes, allowing the flavors to meld. Be careful not to overcook, as this can cause the soup to become too thick.
Step 6
Turn off the heat and use an immersion blender (or a regular blender) to purée the soup until smooth. If you prefer a soup with some texture, blend for a shorter time. For an ultra-smooth, velvety consistency, blend until completely smooth. Finally, stir in 4 slices of cheddar cheese until fully melted. The cheddar cheese not only seasons the soup but also adds a delightful cheesy richness.
Step 7
Taste the soup and adjust the seasoning by adding Parmesan cheese as desired. For the best flavor, opt for a Parmesan cheese with a high cheese content. Stir well until incorporated.
Step 8
Serve the warm potato soup in bowls. For an even more satisfying meal, prepare some toasted bread. Cut slices of bread into small pieces and toast them in a pan or air fryer until golden brown and crispy.
