Main Ingredients- 5 medium potatoes
- 2 hard-boiled eggs
- 4 Tbsp canned corn kernels (drained)
Dressing & Seasoning- 3 Tbsp mayonnaise
- 1 Tbsp mustard (Dijon or whole grain)
- Pinch of black pepper (to taste)
- 0.5 Tbsp sugar (optional, for sweetness)

Cooking Instructions
Step 1
Thoroughly wash the potatoes, then peel them. Place the peeled potatoes in a pot, cover with water, and bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 20-25 minutes, or until a fork can easily pierce the potatoes. ( This step takes the longest, so allow ample time.)
Step 2
Drain the cooked potatoes well and place them in a bowl. It’s easier to mash them while they are still warm, so mash them smoothly with a fork or a potato masher until no lumps remain.
Step 3
Prepare the 2 hard-boiled eggs by peeling them. Add the peeled eggs to the bowl with the mashed potatoes. Mash the eggs along with the potatoes using a fork or masher, ensuring they are well incorporated and broken down.
Step 4
Drain the canned corn kernels thoroughly. Add the drained corn to the bowl containing the mashed potatoes and eggs. The corn will add a delightful sweetness and pop. Mix everything together gently with a spatula until well combined.

Add 3 tablespoons of mayonnaise for a creamy and rich texture. You can adjust the amount of mayonnaise to your preference for desired moisture.
