Ingredients- 2 medium potatoes
- 2 Tbsp butter
- 3 Tbsp milk
- Pinch of salt
- Pinch of black pepper
- 2 large eggs
- 1 stalk green onion (scallion)
Cooking Instructions
Step 1
First, wash the 2 medium potatoes thoroughly. Place them in a microwave-safe bowl, skin on, sprinkle with a pinch of salt, cover with plastic wrap, and microwave for 4 minutes until tender. This steaming method ensures the potatoes become extra soft.
Step 2
Once removed from the microwave, peel the potatoes and place them in a pot. Mash them, then cook over low heat, stirring constantly. This step helps to evaporate excess moisture from the potatoes, resulting in a richer mashed potato base. Be careful not to burn them.
Step 3
To the mashed potatoes, add 3 Tbsp of milk, 2 Tbsp of butter, and a pinch of salt and pepper. Mix well until smooth and creamy. You’ll have a delicious, rich mashed potato ready. Feel free to adjust the amount of butter or milk to your preference.
Step 4
Prepare your serving glass container. Spoon a generous layer of the mashed potatoes into the bottom. Carefully crack 2 large eggs on top of the mashed potatoes. Finally, finely chop 1 stalk of green onion and sprinkle it over the top as a garnish for a beautiful presentation.
Step 5
Set up a double boiler by placing a pot with water on the stove. Gently place the glass container with the eggslut mixture into the pot. Once the water begins to simmer, reduce the heat to low and cook gently. Steam for about 10-15 minutes, or until the egg yolks are set to a soft-boiled consistency.
