I was reminiscing about the simple, old-fashioned toast we used to make with just eggs and scallions, and as I was planning to recreate it, I spotted some crabsticks (surimi)! An idea struck me instantly: what if I added crabsticks to the mix? I was convinced it would elevate the flavor, so I quickly gathered the ingredients and set out to make Crabstick Toast, full of anticipation for how delicious it would turn out. And indeed, with just the addition of crabsticks, it transformed into a wonderfully soft and incredibly tasty toast with a subtle, savory seafood flavor. My younger son, however, found the carrots a bit overwhelming and wasn’t very hungry for it. Lucky me, I got to enjoy more! While I’m not usually a huge fan of carrots, I found them quite enjoyable in this preparation, adding a pleasant texture. This recipe takes the beloved classic diner-style toast and infuses it with the delicate taste of crabsticks, creating a nutritious and delicious snack that kids will love. Ingredients- 4 slices of bread
- 4 sticks of crabstick (surimi)
- 1/2 carrot
- 2 eggs
- Butter, for cooking
- Scallions or green onions, finely chopped

Cooking Instructions
Step 1
Gently shred the crabsticks lengthwise with your fingers, following the natural grain. Avoid chopping them too finely; slightly larger pieces will provide a better texture.
Step 2
Wash and peel the carrot, then julienne it into thin matchsticks. Thinly sliced carrots will mix better with the egg batter and result in a softer texture.
Step 3
Finely mince the scallions or green onions. Their fresh aroma will add a lovely dimension to the toast.

In a mixing bowl, crack the two eggs. Season them with salt (or seasoned salt) and a pinch of black pepper. Whisk the eggs thoroughly with a fork or whisk until well combined.

Add the shredded crabsticks, julienned carrots, and minced scallions to the seasoned egg mixture. Gently mix everything together until well incorporated. Be careful not to overmix.
