Ingredients

  • 4 strips thick-cut bacon, chopped
  • 1 Tbsp minced garlic
  • 3 Tbsp olive oil
  • 200ml heavy cream (whipping cream or cooking cream)
  • 200g short pasta (fusilli recommended)
  • Fresh parsley, chopped (for garnish, optional)

Cooking Instructions

Heat 3 tablespoons of olive oil in a wide skillet over medium-low heat. Add the chopped bacon and minced garlic, and sauté them slowly. It’s important to cook over gentle heat so the bacon renders its fat beautifully and the garlic doesn’t burn. Cook until the bacon is golden brown and slightly crispy.

Once the bacon is nicely cooked, pour in 200ml of fresh heavy cream. I personally enjoy the flavor of ‘Elle & Vire’ brand cream, but any good quality cream will work. After adding the cream, increase the heat to medium and stir well to combine.

Bring the cream to a gentle simmer, then reduce the heat to low. Let it cook slowly until the sauce thickens slightly. Stir occasionally to prevent sticking to the bottom of the pan. If the sauce becomes too thick, you can add a splash of the pasta cooking water to adjust the consistency.

Add 200g of your pre-cooked fusilli pasta (or your favorite pasta shape) to the simmering cream sauce. Gently toss the pasta to coat it evenly with the sauce. Continue to cook for about 1 minute, allowing the pasta to absorb some of the sauce, then immediately remove from the heat. Garnish with freshly chopped parsley, if desired. Serve immediately while hot for the best flavor!
