Today’s brunch menu features soft scrambled eggs made with bacon and onions, served with garlic fried rice and a fresh salad. It’s a simple yet delicious home brunch.
Main Ingredients- 5 large fresh eggs
- 110g thick-cut bacon
- 1/2 medium onion
- 1 stalk green onion (scallion)

Step 1
First, let’s prepare all the ingredients needed to make these delicious bacon and cheese scrambled eggs.

Finely chop the bacon, onion, and green onion. Chopping them into small, uniform pieces ensures that the flavors meld beautifully during cooking, resulting in a more delicious dish.

In a bowl, crack the 5 fresh eggs. Add the Parmesan cheese, Tentsuyu (or 2 pinches of salt as an alternative), cooking sake, milk, and a pinch of black pepper. Whisk everything together thoroughly until well combined. The Tentsuyu adds a lovely umami depth, and the milk will make the scrambled eggs extra creamy.

Heat 1 tablespoon of butter in a non-stick skillet over medium-low heat until it melts. If your bacon is quite fatty, you can reduce or omit the butter. The bacon I used was lean, so I opted for a little butter.

Once the butter has melted, add the chopped bacon, onion, and green onion to the skillet. Sauté for about 2-3 minutes until the bacon is lightly browned and the onions become translucent. You’ll start to smell the wonderful aromas released from the ingredients.

Let the eggs cook undisturbed for about 30 seconds, or until the edges begin to set. Then, using a spatula or chopsticks, gently stir and fold the eggs from the edges towards the center, creating soft curds. Avoid vigorous stirring; large, soft folds will yield the best texture.

Remove the skillet from the heat when the eggs are about 70% cooked and still look slightly wet. The residual heat from the pan will continue to cook them gently, resulting in incredibly soft and creamy scrambled eggs. Taking them off the heat a little early is key to achieving that perfect creamy texture!
