Sandwich Ingredients- 2 slices of bread
- 1/2 ripe avocado
- 3 hard-boiled eggs
Sweet & Zesty Sauce- 1 Tbsp whole grain mustard
- 2 Tbsp mayonnaise
- 1 Tbsp sugar
- 1 Tbsp whole grain mustard

Cooking Instructions
Step 1
First, prepare the two slices of bread that will form the base of your sandwich. Any type of bread works, but slightly thicker slices will offer a more satisfying bite.
Step 2
To make the sandwich neater, especially for children, trim off the crusts from the bread slices. Remove all four edges. (The crusts can be saved to make breadcrumbs or toasted separately for a snack.)
Step 3
To prepare the avocado, cut it in half along the seed. Gently twist the halves to separate them. Insert the knife blade into the seed and twist slightly to remove it. Then, use a spoon to scoop the flesh out of the peel.
Step 4
Place the scooped avocado flesh into a bowl and mash it with a fork. Aim for a consistency with some small chunks remaining, rather than a completely smooth puree. This adds nice texture.

Boil the three eggs in a pot of water until hard-boiled. (Boiling for about 10-12 minutes should suffice.)

Carefully peel the shells off the hard-boiled eggs. Soaking them in cold water for a moment after boiling makes peeling easier.

To the mashed avocado, add 1 tablespoon of whole grain mustard, 2 tablespoons of mayonnaise, and 1 tablespoon of sugar. Mix well. Add the peeled hard-boiled eggs and mash them with the avocado mixture using a fork. Ensure the eggs and avocado are well combined with the sauce, leaving some texture.

Spread the avocado and egg mixture generously onto one slice of the prepared bread (with crusts removed). Distribute it evenly across the surface.

Place the other slice of bread on top to complete the sandwich. Gently press down with your hands to help the filling settle.
