Break free from the notion that cream soups must contain milk and cream! This vegan pumpkin cream soup is made with the rich addition of pine nuts, offering a deep, smooth, and creamy texture. Experience a uniquely flavorful pumpkin soup made easily at home.
Ingredients- 4 mini pumpkins
- 1 carrot
- 2 tbsp pine nuts or your favorite nuts
- Salt to taste
- 2/3 cup (approx. 130ml) reserved pumpkin cooking water
- 2-3 cups (approx. 400-600ml) warm water
- Olive oil, for drizzling
- A pinch of parsley flakes
- Baking soda, for cleaning the pumpkin
Cooking Instructions
Step 1
First, let’s clean the pumpkin thoroughly. Sprinkle a little baking soda onto the pumpkin skin and gently scrub it with a soft brush. Rinse it under running water several times to ensure it’s completely clean and free of any residue.
Step 2
Place the cleaned pumpkin and the peeled, chopped carrot into a pot. Add enough water to cover about half of the ingredients, then cover the pot with a lid and cook. Periodically check for doneness by piercing the pumpkin and carrot with a fork or chopstick; they should be tender.
Step 3
Once the pumpkin and carrot are well-cooked, turn off the heat. Carefully remove the seeds and peel the pumpkin while it’s still warm. Peeling the pumpkin will result in a smoother soup.
Step 4
Transfer the peeled pumpkin and cooked carrot to a blender. Add a pinch of salt to season the mixture.
Step 5
Pour the reserved pumpkin cooking water (about 2/3 cup or 130ml) into the blender. Add 2-3 cups (approx. 400-600ml) of warm water. Ensure there’s enough liquid to submerge the ingredients about halfway, so the blender can easily process them.
Step 6
To enhance the nutty flavor, lightly toast the pine nuts in a dry pan over low heat until fragrant. This process really brings out their aroma. Add 1-2 tablespoons of the toasted pine nuts to the blender.
Step 7
Blend all the ingredients until smooth and creamy. Check the consistency; if it’s too thick, gradually add more warm water and blend again. Taste and adjust seasoning, adding more salt if needed. A little black pepper can also be added according to your preference.
Step 8
Pour the smooth pumpkin soup into serving bowls. Drizzle a little olive oil over the top for added richness and sprinkle with parsley flakes for garnish. For an extra touch, you can thinly slice some reserved pumpkin skin or add a few toasted pine nuts on top before serving.
