Make Delicious Mashed Potato Salad at Home: Perfect for Sandwiches!
Our fluffy mashed potato salad, made with boiled eggs and fresh vegetables, is so soft and delicious that it can be enjoyed as a meal replacement or a snack. It’s perfect for satisfying late-night cravings as it’s easily digestible and light. If you have leftover potatoes, this is a fantastic dish to make. It also makes a wonderful sandwich filling.
Ingredients- 1kg potatoes
- 4 hard-boiled eggs
- 1/2 onion
- 1/2 carrot
- A little cucumber (or celery)
- 15 Tbsp mayonnaise
- 2 Tbsp mustard
- 1 Tbsp sugar
- A pinch of black pepper
- 1 tsp salt
Cooking Instructions
Step 1
First, peel the potatoes. You can either steam them with the skins on and peel them afterward, or peel them before steaming – either method works well depending on your preference.
Step 2
Steaming the potatoes in a steamer basket or on a rack helps achieve a wonderfully fluffy texture. Steaming them on the stove for about 40 minutes yields perfectly cooked, soft potatoes. Boiling them in water will reduce the cooking time slightly.
Step 3
It’s important to mash the potatoes while they are still hot. Once they cool down, they become firm and harder to mash. While a potato ricer makes this task easier, a large fork works just as well to achieve a smooth mash.
Step 4
Mash the hard-boiled eggs thoroughly, just like you did with the potatoes.
Step 5
Finely mince the carrot; this adds both color and texture to the potato salad. You can use a knife for mincing, but a food processor or chopper will make this step quicker and easier.
Step 6
Finely mince the onion as well. Mincing it as small as possible will ensure a pleasant texture when you bite into the salad.
Step 7
For a touch of freshness, we’re adding cucumber. If you prefer, you can substitute it with celery for a delightful crunch. Choose whichever you like best!
Step 8
Now, combine the mashed potatoes, mashed hard-boiled eggs, and all the finely minced vegetables (carrot, onion, and cucumber/celery) into a large bowl.
Step 9
Add the mayonnaise (15 Tbsp), mustard (2 Tbsp), and sugar (1 Tbsp) to the bowl. I used whole grain mustard for an extra layer of flavor. Feel free to adjust the amount of sugar and salt to suit your taste. Don’t forget a pinch of black pepper.
Step 10
Mix everything together thoroughly until well combined. Ensure there are no lumps and the ingredients are evenly distributed for a perfectly smooth salad.
Step 11
This delicious potato salad can be enjoyed on its own, or you can spread a generous amount onto toasted bread slices to make a fantastic sandwich. It’s a hearty and satisfying meal option.
