Main Ingredients

  • 4 strips thick-cut bacon (cut into bite-sized pieces)
  • 1 onion (thinly sliced)
  • 4 fresh button mushrooms (sliced)
  • 3 servings pasta (approx. 300g)
  • 200ml heavy cream (or whipping cream)
  • 150-200ml milk (to adjust sauce consistency)
  • 4 cloves fresh garlic (finely minced)
  • A pinch of dried parsley (for garnish, optional)

Seasoning & Others

  • Salt to taste (for boiling water and seasoning)
  • Black pepper to taste
  • 1-2 tbsp olive oil or butter (for sautéing)

Cooking Instructions

Step 1

Bring a large pot of water to a rolling boil. Add about 1/2 teaspoon of salt. Once boiling, add the pasta and cook for approximately 7-8 minutes, aiming for ‘al dente’ (slightly firm to the bite), which is usually 1-2 minutes less than the package instructions. Reserve about one cup of the pasta water before draining.

While the pasta cooks, prepare your ingredients. Peel and thinly slice the onion. Mince the garlic finely. (Using pre-minced garlic is also convenient). Slice the button mushrooms about 0.5cm thick and cut the bacon into similar-sized pieces.

Heat 1-2 tablespoons of olive oil (or butter) in a large pan over medium heat. Add the minced garlic and sauté until fragrant. Then, add the sliced onions and cook until they become translucent. Next, add the sliced mushrooms and bacon, and sauté together until the bacon is golden brown and the mushrooms have released their moisture. Season with a little salt and pepper at this stage for enhanced flavor.

Once all the ingredients are well sautéed, pour in the 200ml of heavy cream and 150-200ml of milk. The consistency of the cream sauce can be adjusted to your preference; if it seems too thin, simmer over medium heat for a bit longer to thicken. When the sauce begins to bubble, add the drained pasta and toss well to coat the pasta evenly with the sauce. Continue to cook for another 1-2 minutes, allowing the pasta to absorb the sauce and meld together beautifully, creating a delicious cream pasta. Finally, sprinkle with dried parsley if desired for a beautiful garnish. (If you have reserved pasta water, you can add a little at a time to achieve your desired sauce consistency).
