Key Ingredients- 300g sweet pumpkin (weight after peeling and removing seeds)
- 1 Tbsp glutinous rice flour
- 1 slice baby cheese
- 1 tsp baby salt (or unsalted)
- 250ml water (for adjusting consistency)
Cooking Instructions
Step 1
Peel the sweet pumpkin, thoroughly remove the seeds, and then cut it into bite-sized pieces (about 3-4 cm). Cutting it into pieces that fit easily in your steamer will be helpful.
Step 2
Place the cut sweet pumpkin in a steamer and steam over high heat for 15-20 minutes. It’s ready when a chopstick easily pierces through it. Turn off the heat. Be careful not to overcook, as it can become too watery.
Step 3
Once steamed, let the sweet pumpkin cool slightly, then gently peel off any remaining skin. Transfer the steamed pumpkin and 200ml of water to a blender and blend until very smooth. If your baby is younger, you can adjust the water to make it thinner.
Step 4
Pour the blended sweet pumpkin puree into a pot. Cook over medium-low heat, stirring constantly. It’s crucial to keep stirring to prevent the puree from sticking to the bottom of the pot.
Step 5
Glutinous rice flour can easily clump, so mix 1 tablespoon of glutinous rice flour with 50ml of water until smooth to create a slurry. Gradually add this slurry to the pumpkin porridge while stirring. Adding the rice flour will thicken the porridge and make it creamier.
Step 6
As the porridge starts to thicken while simmering, add 1 slice of baby cheese. Stir well until the cheese is completely melted and incorporated. Season with 1 teaspoon of baby salt to suit your baby’s taste. It’s best to start with a small amount and taste before adding more. (Adjust salt if using unsalted cheese).
Step 7
Continue to cook over low heat, stirring continuously, until the porridge reaches your desired consistency. If it becomes too thick, add a little more water to thin it out. Once the porridge is thick and smooth, your delicious baby sweet pumpkin porridge is ready! Let it cool slightly before serving to your baby.
