Ingredients

  • Tofu 200g (firm or silken tofu works)
  • Lemon juice 4 Tbsp (freshly squeezed is best for flavor)
  • Olive oil 5 Tbsp (extra virgin olive oil recommended)
  • Salt 1/2 tsp (adjust to taste)

Cooking Instructions

Step 1

First, cut the tofu into 4 equal pieces. Blanch them in boiling water for about 2 minutes. This helps to remove excess water from the tofu, resulting in a smoother and more delicious mayonnaise.

In a blender or food processor, combine the blanched tofu, 4 tablespoons of lemon juice, and 1/2 teaspoon of salt. Blend until smooth. The lemon juice adds a pleasant tanginess characteristic of mayonnaise.

While the mixture is still cool, gradually add the 5 tablespoons of olive oil in 2 to 3 additions, blending continuously until the mixture is smooth and emulsified.
