Let’s make a hearty potato soup with cashews that’s perfect for a quick and filling breakfast or a light meal. This recipe is designed to be simple yet nourishing, providing a comforting and satisfying experience.
Ingredients- 2 medium potatoes
- 1 cup cashews (standard paper cup size)
- 5 cups kelp and shiitake mushroom broth
- 1 medium onion

Step 1
To save time, prepare the kelp and shiitake mushroom broth in advance. Soak dried kelp and shiitake mushrooms in water overnight. The mushrooms can be reserved for other dishes.
Step 2
The cashews are key to achieving a wonderfully creamy texture. Soak the cashews in about 1 cup of the prepared kelp and shiitake mushroom broth for about 20 minutes until softened. Once soaked, combine the cashews and the broth in a mini blender and process until very smooth. This step ensures a luxurious, velvety soup.
Step 3
Peel the potatoes and cut them into bite-sized pieces (about 2-3 cm). Cutting them uniformly will help them cook evenly.

Place the cut potatoes and the peeled and roughly chopped onion into a pot. Add the remaining 4 cups of kelp and shiitake mushroom broth. Season with salt to your taste. Bring to a boil over high heat, then reduce to medium-low heat and simmer until the potatoes are very tender, about 15-20 minutes.
