This homemade treat is less sweet than store-bought versions, bursting with the natural sweet-tart flavor of fresh strawberries. Ingredients- Fresh strawberries, about 80-90g
- Fresh milk, 300g
- Unrefined sugar, 40g
- Sheet gelatin, 8g

Prepare all your ingredients for the pudding. This recipe yields approximately 2-3 puddings, depending on the size of your serving bowls. While the preparation is quite simple, remember that the pudding needs time to set in the refrigerator, so plan accordingly.^^

Soak the sheet gelatin in cold water for about 5 minutes until it becomes soft and pliable. If you’re making this during a hot summer, consider using ice water to prevent the gelatin from clumping. Once softened, gently squeeze out any excess water.

Wash the strawberries thoroughly. Dice about half of them into bite-sized pieces for texture and visual appeal. Mash the remaining half into a rough puree using a fork or a masher. The mashed strawberries will add a lovely flavor and color to your pudding.

In a saucepan, combine the fresh milk (300g) and unrefined sugar (40g). Gently heat over medium-low heat, stirring until the sugar is dissolved. Warm the milk just until it’s about to simmer – you’ll see small bubbles forming around the edges. Do not let it come to a rolling boil.

As soon as the milk begins to show signs of simmering, immediately remove the saucepan from the heat. Add the squeezed sheet gelatin and stir continuously until it is completely dissolved and fully incorporated into the milk. Ensure there are no gelatin lumps.

Next, stir in the mashed strawberry puree. Mix well until the strawberry pulp is evenly distributed throughout the milk mixture. This creates your delicious strawberry milk pudding base.
