For Boiling the Eggs- 5 large eggs
- 750ml water
- 1 tsp coarse salt
- 1 Tbsp vinegar
For the Egg Mayo Sauce- 1 Tbsp butter (softened at room temperature)
- 5 Tbsp mayonnaise
- 1 Tbsp whole grain mustard
- Pinch of black pepper
- 1 Tbsp butter (softened at room temperature)
- 5 Tbsp mayonnaise
- 1 Tbsp whole grain mustard
- Pinch of black pepper
Cooking Instructions
Step 1
First, set aside 1 tablespoon of butter at room temperature to soften. This butter will add a rich depth of flavor to your egg mayo.
Step 2
Gently place 5 large eggs into a saucepan. Ensure the pot is not too small, so the eggs don’t bump into each other while cooking.
Step 3
Pour 750ml of fresh water into the saucepan, enough to fully cover the eggs. Sufficient water ensures the eggs cook evenly.
Step 4
Start boiling over high heat. Once the water comes to a rolling boil, reduce the heat to medium and add 1 teaspoon of coarse salt. Salt helps make the eggshells easier to peel.
Step 5
Next, add 1 tablespoon of vinegar, cover the pot, and continue to boil for about 10 minutes. 10 minutes will result in hard-boiled eggs, perfect for making egg mayo.
Step 6
Immediately transfer the boiled eggs to a bowl of cold running water. Rinse them thoroughly. Cooling them in cold water makes peeling much easier and helps cool the eggs down quickly, preserving their texture.
Step 7
Once cooled, carefully peel the shells off the eggs. Tap the eggs gently all around to loosen the shell, then use the cracks to peel them off cleanly. (Isn’t it satisfying when they peel so nicely?)
Step 8
Finely chop the egg whites into bite-sized pieces. Use a knife to carefully dice them. It’s best to chop them slightly larger than a puree to maintain some texture.
Step 9
Mash the egg yolks thoroughly using a fork or spoon until they form a smooth paste. It’s important to mash them completely without any lumps.
Step 10
To the mashed yolks, add the softened 1 tablespoon of butter and 5 tablespoons of mayonnaise. Mayonnaise is key to the creamy texture and rich flavor of the egg mayo.
Step 11
Now, add 1 tablespoon of whole grain mustard for an extra layer of flavor. The mustard will add a subtle tang and aroma, making your egg mayo truly special.
Step 12
Combine all the sauce ingredients in a bowl. Gently mix the mashed yolks, butter, mayonnaise, and mustard until well combined. You can adjust the consistency and taste at this stage.
Step 13
Add the finely chopped egg whites to the bowl with the sauce. Gently fold them in, ensuring the egg whites are evenly coated with the creamy mixture.
Step 14
Finally, sprinkle a pinch of black pepper. Adjust the amount to your preference. Mix everything together well – the egg whites, sauce, and pepper – until the delicious egg mayo spread is ready! Ensure all components are thoroughly blended.
Step 15
Voila! Your appetizingly colored egg mayo is complete. It feels extra generous and satisfying because you made it yourself!
Step 16
When the kids get home from school, spreading this on warm bread makes for a wonderful snack. It’s also fantastic served on toast as a canapé.
