Ingredients

  • Store-bought udon sushi kit (for 2 servings)
  • Warm cooked rice: 270g
  • Crab sticks (imitation crab meat): 3-4 sticks
  • Mayonnaise: 1/2 Tbsp
  • Mustard sauce: 1/3 to 1/4 Tbsp (adjust to taste)
  • Black pepper: a pinch
  • Salt: 1 pinch

Cooking Instructions

Gently squeeze out the seasoning liquid from the fried tofu pouches (aburaage) that come with the udon sushi kit. To remove excess oil and make them cleaner, briefly blanch the pouches in hot water. After blanching, drain them in a colander and then carefully press out any remaining water with your hands. Be gentle to avoid tearing the pouches.

Shred the crab sticks finely with your hands following the grain, or slice them into long, thin strips with a knife. (Shredding along the grain can result in pieces that are too short and crumbly, so slicing them into longer strips helps maintain a better texture!) In a bowl, combine the shredded or sliced crab sticks with mayonnaise, mustard sauce, a pinch of black pepper, and a pinch of salt. Mix everything thoroughly to create the crab stick filling.

Prepare the warm cooked rice. Let the rice cool slightly so it’s not too hot to handle. Then, add the sushi vinegar and seasoned sesame seeds from the udon sushi kit. Gently mix with a spatula or rice paddle, being careful not to mash the rice grains, ensuring the seasoning is evenly distributed.

Take a portion of the seasoned rice and shape it into a small, flattened ball. Alternatively, you can directly fill the rice into the udon pouches. Gently open a prepared tofu pouch and place the molded rice inside. Use the edges of the pouch to enclose the rice, shaping it into a neat bundle.

If you filled the rice into the pouch first, lightly press the rice down to shape it, then generously top with the prepared crab stick mixture. Another option is to use a very small amount of rice, carefully tuck it into the pouch without pressing too much, and then top with the crab mixture for garnish.
