Main Ingredients- Glass noodles 80g (approx. 2 servings)
- Carrots 50g (approx. 1/4 medium)
- Onion 85g (approx. 1/2 medium)
- Crab sticks 95g (approx. 3-4 sticks)
- Perilla oil (deul-gireum) 1 Tbsp
Seasoning Sauce- Soy sauce 4 Tbsp
- Sugar 1 Tbsp
- Minced garlic 1/2 Tbsp
- Chopped green onion 1 Tbsp (white parts mainly)
- Sesame oil 1/2 Tbsp
- Sesame seeds 1 Tbsp (lightly crushed)
- Black pepper to taste
- Soy sauce 4 Tbsp
- Sugar 1 Tbsp
- Minced garlic 1/2 Tbsp
- Chopped green onion 1 Tbsp (white parts mainly)
- Sesame oil 1/2 Tbsp
- Sesame seeds 1 Tbsp (lightly crushed)
- Black pepper to taste
Cooking Instructions
Step 1
First, prepare the vegetables. Wash and peel the carrots and onion, then julienne them into approximately 0.3cm thick strips. For the crab sticks, you can leave them whole, or shred them along their natural grain into bite-sized pieces to better integrate them into the Japchae for a more pleasant texture.
Step 2
The key to delicious Japchae is the seasoning sauce! In a small bowl, combine the soy sauce, sugar, minced garlic, chopped green onion, sesame oil, sesame seeds, and black pepper. Mix thoroughly with a spoon to create the seasoning sauce. For an enhanced nutty aroma, lightly crush the sesame seeds before adding them.

Now, let’s cook the glass noodles. Fill a pot with water about halfway and bring it to a rolling boil over high heat. Once the water is boiling, add the 80g of glass noodles and cover the pot. Cook for 4 minutes. Be careful not to overcook them, as they can become mushy. Boiling for exactly 4 minutes ensures a chewy texture.
Step 4
After the glass noodles have cooked for 4 minutes, drain the water from the pot, leaving about two ladlefuls behind. This step is crucial to keep the noodles moist and allow them to absorb the sauce beautifully. The remaining water should be just enough to slightly cover the noodles.
Step 5
It’s time to stir-fry! Add the julienned onion and carrots to the pot with the moist glass noodles. Pour in all the prepared seasoning sauce. Stir-fry over medium heat for about 3 minutes, stirring constantly to ensure everything is evenly coated. The vegetables will soften slightly while the noodles absorb the delicious flavors.
Step 6
Finally, add the prepared crab sticks to the pot and stir-fry for another minute. Crab sticks are already cooked, so they don’t need extensive cooking. Stir-frying briefly over high heat will allow the crab sticks to blend well with the Japchae without becoming dry or tough.
Step 7
Once all ingredients are well combined, turn off the heat. Drizzle with 1 tablespoon of perilla oil and give it a final mix. Your delicious and mild Crab Stick Japchae is now ready! It tastes best when served warm. Enjoy your meal!
