Essential Ingredients

  • 250g canned corn kernels
  • 150g canned tuna
  • 5 Tbsp minced onion
  • 2 eggs
  • Pinch of salt
  • A little mayonnaise (optional)
  • 3 Tbsp pancake mix (or all-purpose flour)

Cooking Instructions

Step 1

Start by cracking 2 eggs into a bowl. Add a pinch of salt and whisk them well with a fork or whisk until evenly combined. Whisking the eggs thoroughly will ensure a smoother batter.

Step 1

Step 2

To the beaten eggs, add 250g of corn kernels and 150g of tuna. It’s crucial to drain the corn thoroughly and squeeze out as much oil as possible from the tuna. This step prevents the batter from becoming too wet, allowing the pancakes to hold their shape better when frying.

Step 2

Step 3

Add 3 tablespoons of pancake mix to help bind the ingredients and create a crispier texture. If you don’t have pancake mix, all-purpose flour can be used as a substitute. Mix everything together until well combined and no lumps remain.

Step 3

Step 4

Finely mince the onion. The key here is to chop the onion very finely. Larger pieces of onion can cause the pancakes to fall apart during cooking. Aim for pieces that are about the size of a corn kernel or even smaller for the best texture and consistency.

Step 4

Step 5

Heat a generous amount of oil in a pan over medium-low heat. Spoon portions of the corn and tuna mixture into the pan to form pancakes of your desired size. Let each pancake cook undisturbed until the bottom is golden brown and firm. This allows it to set properly, making it easier to flip without tearing.

Step 5

Step 6

Your delicious Corn and Tuna Pancakes are ready! They’re best served hot. For an extra burst of flavor, drizzle a little mayonnaise over the top. These pancakes are perfect as a beer snack or even a light meal.
