Main Ingredients- Buckwheat Noodles (Soba) 150g
- Tsuyu (noodle dipping sauce) to taste
- Radish 1 piece (about 5cm)
- Scallions 2 stalks
- Mustard (optional) a little
Cooking Instructions
Step 1
First, prepare the refreshing dipping sauce for your Soba noodles. Use store-bought Tsuyu and dilute it with water. Since the recommended dilution ratio can vary by brand, check the product label. Adjust the seasoning to your preference by mixing Tsuyu and water. To ensure it’s perfectly chilled, store the prepared sauce in the refrigerator.

Now, it’s time to cook the buckwheat noodles. Fill a pot with plenty of water and bring it to a rolling boil.

Once the water is boiling vigorously, add the 150g of buckwheat noodles.

As the noodles begin to bubble up and threaten to overflow, add about one ladleful of cold water. Repeating this process a few times prevents the noodles from sticking together and ensures they cook to a perfect, springy texture.

Continue boiling the noodles, adding cold water about 2-3 times. Once the noodles are cooked to your liking, turn off the heat and immediately drain them.

After draining the hot water, rinse the cooked buckwheat noodles thoroughly under cold running water, or even better, ice water. Gently rub the noodles with your hands while rinsing to remove any excess starch and achieve a firm, chewy texture. Once rinsed, drain them well in a colander, ensuring all excess water is removed.
Step 7
Prepare the grated radish to enhance the flavor of the dipping sauce. Take one piece of radish (about 5cm in length), wash it, and finely grate it. You’ll need about two tablespoons of grated radish per bowl of noodles. Adding grated radish not only aids digestion but also provides a refreshing and clean taste to the cold Soba.

Finally, prepare the garnishes. Trim and finely chop two stalks of scallions. If scallions are unavailable, you can use thinly sliced white parts of green onions for a similar aromatic touch.
