Ingredients

  • 1 Potato
  • 1/4 Onion
  • A little Carrot
  • 1 Egg
  • 700ml Anchovy-Kelp Broth
  • A little Green Onion
  • 2 Tbsp Perilla Oil
  • 1 Tbsp Fish Sauce (or Soy Sauce for Anchovy)
  • 1/3 Tbsp Salted Shrimp
  • A little Salt (for seasoning)

Cooking Instructions

Step 1

First, peel the potato and dice it into bite-sized cubes or slice it thinly, as per your preference. Finely julienne the carrot and onion. Heat 2 tablespoons of perilla oil in a pot over medium heat. Add the potatoes and sauté them lightly until they begin to turn slightly translucent. Then, add the julienned onion and carrot and continue to stir-fry until the vegetables soften.

Once the vegetables are somewhat softened, add 1 tablespoon of fish sauce (or soy sauce for anchovy) and 1/3 tablespoon of salted shrimp. Stir-fry them together with the vegetables. To prevent the ingredients from burning, add just about 1 tablespoon of broth at a time while stirring to ensure nothing sticks to the bottom of the pot.

Pour in the prepared 700ml of anchovy-kelp broth. Once the broth comes to a boil, skim off any foam that rises to the surface using a fine-mesh sieve or spoon. This is key to keeping the soup clear. Now, reduce the heat to medium and let it simmer until the potatoes are tender. Be mindful not to overcook the potatoes, as they can break down and make the soup cloudy. Adjust the cooking time based on your desired potato texture.

Once the potatoes are cooked, taste the soup and add a pinch of salt if needed to adjust the seasoning. In a separate bowl, whisk the egg. Reduce the heat to low and slowly drizzle the beaten egg into the simmering soup in a circular motion. Once the egg is cooked, gently stir it a few times.
