Cooking Instructions
Step 1
First, peel the 30g of carrot and slice it very thinly. Then, mince it finely. Mincing the vegetables finely ensures they are evenly distributed within the omelet and don’t clump together.
Step 2
Peel and finely mince the 50g of onion. This is approximately 1/4 of a medium-sized onion. The onion’s natural sweetness will subtly infuse the omelet, making it even more delicious.
Step 3
Finely mince the 20g of scallion (about half a stalk, including both white and green parts). The fragrant scallion helps to eliminate any eggy smell and enhances the overall flavor.
Step 4
Remove the seeds from the 30g of red bell pepper, wash it clean, and then mince it finely. This is about 1/4 of a medium pepper. Adding red bell pepper makes the rolled omelet visually much more appealing.
Step 5
Now, crack the 6 fresh eggs into a stainless steel or glass bowl. Using fresh eggs is key to preventing a raw odor and achieving a tender texture.
Step 6
Using a chopstick, gently break and remove the chalaza (the stringy white part) from the egg yolks. Removing the chalaza contributes to a smoother, more delicate omelet.
Step 7
To eliminate any unwanted egg smell and enhance tenderness, add 1 teaspoon of cooking sake (or mirin). This step is crucial for a pleasant taste.
Step 8
Add a pinch of salt for seasoning. If you plan to eat the omelet without dipping sauce, you might want to add a little more salt for a stronger flavor.
Step 9
Gently whisk all the egg ingredients together until well combined. While a blender can make this process quicker and more uniform, a whisk will work perfectly well with a little effort.
Step 10
Add all the minced vegetables (carrot, onion, scallion, red bell pepper) to the egg mixture and stir well to combine. Ensure the vegetables are evenly distributed throughout the egg batter.
Step 11
Now, lightly coat a non-stick frying pan with cooking oil. Fold a paper towel a couple of times and use it to thoroughly grease the entire surface of the pan, including the sides. Evenly coating the pan prevents sticking and ensures a beautifully cooked omelet.
Step 12
Pour the vegetable-egg mixture thinly and evenly into the heated pan. Once the edges of the egg start to set, you’re ready for the next step.
Step 13
When the egg layer is thinly cooked, gently fold over the edge closest to you. Then, carefully roll the omelet forward, guiding it along the pan. This process connects the cooked egg with the uncooked batter.
Step 14
Once the first roll is complete, carefully slide it back to the starting edge of the pan. Re-grease the pan lightly with cooking oil. This step is crucial to prevent the next layer of egg from sticking.
Step 15
Pour more egg mixture thinly over the end of the rolled omelet and the pan surface. This new layer of egg will bind the previous roll to the new one.
Step 16
As the new egg layer begins to cook, gently roll the omelet again. Use a spatula to press lightly on the sides of the omelet as you roll; this helps to create a neat, square shape.
Step 17
Finally, prop the omelet up against the side of the pan and rotate it to cook all sides. This helps to form a perfect square shape. Ensure all sides are evenly cooked. Your delicious vegetable rolled omelet is now complete!
Step 18
Transfer the finished rolled omelet to a cutting board and let it cool slightly. Then, slice it into your desired serving pieces. Enjoy with your favorite dipping sauces like ketchup, Caesar dressing, or chili sauce for an extra flavor boost.
