How to Make Your Own Rice Cake with Leftover Vegetables
Create your unique rice cake using vegetables you have at home.
Rice Cake Ingredients- 2/3 bowl cooked rice (approx. 150g)
- 3 shiitake mushrooms
- 1/4 zucchini
- 1/4 carrot
- 1 Tbsp cooking oil
- 1 tsp sesame oil (for rice seasoning)
Seasoning & Garnish- 1 tsp sesame oil
- 1/4 tsp salt (for stir-frying vegetables and seasoning rice)

Cooking Instructions
Step 1
First, let’s prepare the vegetables. Wash the carrot and zucchini thoroughly and slice them into thin strips. Remove the stems from the shiitake mushrooms and chop them coarsely. Heat a pan over medium-low heat, add 1 Tbsp cooking oil, and sprinkle 1/4 tsp salt over the shredded carrots. Stir-fry until softened, then set aside to cool.
Step 2
You can use the same pan. Now, lightly sprinkle a pinch of salt (optional) on the zucchini strips and stir-fry briefly. Avoid overcooking; stir-fry for just 1-2 minutes to maintain a slightly crisp texture. Set the stir-fried zucchini aside to cool with the other vegetables.
Step 3
Add the coarsely chopped shiitake mushrooms to the pan and stir-fry with a pinch of salt. Cook until the moisture evaporates and the mushrooms are lightly browned for enhanced flavor. Set aside the stir-fried shiitake mushrooms to cool along with the other vegetables.
Step 4
In a bowl, combine 2/3 bowl of warm cooked rice, 1 tsp sesame oil, 1 tsp sesame seeds, and a tiny pinch of salt (adjust to taste). Using a spatula or spoon, gently mix the rice to ensure the seasoning is evenly distributed without mashing the grains. Be careful not to make the rice too mushy, as this can affect the cake’s shape.
Step 5
Lightly grease the inside of your rice bowl (or mold) with sesame oil. This step is crucial to prevent the rice cake from sticking, ensuring a clean release and a neat shape. Coat the entire inner surface of the bowl thoroughly.
Step 6
Now it’s time to assemble the rice cake. Place about 1/3 of the seasoned rice into the greased bowl and press it down evenly to form a flat layer. Spread a thin layer of stir-fried shiitake mushrooms over the rice, followed by another 1/3 of seasoned rice, pressed flat. Then, add the stir-fried zucchini, and finally, cover the top completely with the remaining seasoned rice. Gently press each layer as you add it to help the cake hold its shape.
Step 7
Place a plate over the rice bowl. Holding the bowl firmly with one hand and the plate with the other, quickly invert them. Slowly lift the bowl to reveal your beautifully shaped rice cake on the plate. If it seems stuck, gently tap the sides of the bowl.
Step 8
Carefully arrange the stir-fried carrots you prepared earlier on top of the rice cake for decoration. You can spread the carrots evenly over the surface or arrange them in a decorative pattern.
Step 9
Finally, sprinkle sesame seeds generously over the rice cake for a delicious nutty flavor and an attractive appearance. Your colorful vegetable rice cake is now complete! It’s delicious served warm, or you can let it cool slightly. Enjoy this fun cooking experience, perhaps with children!
