Delicious Bibimbap Made with a Savory Soy Sauce Dressing
This bibimbap recipe uses finely chopped vegetables for easy eating and a beautiful presentation. It’s perfect for when you have a low appetite or want a satisfying meal!^^
Main Ingredients- 2 bowls of mixed grain rice (warm)
- 4 button mushrooms (finely diced)
- 1/4 carrot (finely diced)
- 1/2 zucchini (finely diced)
- 1/2 onion (finely diced)
- 2 eggs
- 2 tsp perilla oil
- 1 Tbsp cooking oil
- Pinch of salt
- Pinch of black pepper
- Pinch of toasted sesame seeds
Savory Soy Sauce Dressing- 2 Tbsp soy sauce
- 1 Tbsp chopped green onion (minced very finely)
- 1 tsp sugar
- 1 Tbsp minced garlic
- Pinch of black pepper

Cooking Instructions
Step 1
First, heat about 1/2 Tbsp of cooking oil in a pan over medium heat. Add the finely diced carrots, season with a tiny pinch of salt, and sauté for about 2 minutes until the carrots look slightly translucent. Set the sautéed carrots aside on a separate plate to cool.
Step 2
Add another 1/2 Tbsp of cooking oil to the same pan. Add the finely diced zucchini, sprinkle with a little salt for seasoning, and stir-fry for about 2 minutes until the zucchini is tender. Transfer the sautéed zucchini to another plate to cool.
Step 3
Wipe the pan clean or use a different one. Heat 1/2 Tbsp of cooking oil over medium heat. Add the finely diced onion and a pinch of salt, then stir-fry until the onion becomes translucent and sweet, about 2 minutes. Set the sautéed onion aside.
Step 4
Finally, add the remaining 1/2 Tbsp of cooking oil to the pan and sauté the diced button mushrooms. Cook for about 3 minutes until the mushroom’s moisture has evaporated and they are lightly browned. Season with a little salt to enhance the mushroom’s flavor. Set the sautéed mushrooms aside with the other vegetables to cool.
Step 5
Now, let’s make the delicious soy sauce dressing. In a small bowl, combine 2 Tbsp soy sauce, 1 tsp sugar, 1 Tbsp minced garlic, 1 Tbsp finely chopped green onion, and a pinch of black pepper. Mix well until the sugar is dissolved. Your savory and slightly sweet dressing is ready!
Step 6
Place 2 bowls of warm mixed grain rice into your bibimbap bowls. Artfully arrange the sautéed carrots, zucchini, onion, and mushrooms around the rice, alternating colors. Arranging them like a rainbow makes it visually appealing.
Step 7
Drizzle 2 tsp of perilla oil over the vegetables for a fragrant aroma. If you like, fry an egg to your preference (sunny-side up or over easy) and place it in the center for an even more satisfying dish. Breaking the yolk and mixing it in is absolutely delicious!
