  • 1/2 Tbsp minced garlic

First, thoroughly wash the carrots, king oyster mushrooms, and bell peppers. Finely chop them into small cubes, about 0.5cm. Cutting the vegetables small ensures they cook evenly and blend well with the rice. Place the chopped vegetables in a pan and sprinkle lightly with salt for basic seasoning.

Prepare the seasoning mixture that will add depth of flavor to your fried rice. In a small bowl, combine 1 Tbsp of kelp soy sauce (or regular soy sauce), a pinch of salt, and 1/2 Tbsp of minced garlic. Mix them well. Soy sauce and garlic are crucial for imparting a rich taste to the fried rice.

In the same pan or a separate one, push the seasoned vegetables to one side. Add a little olive oil to the empty space in the pan. Once the olive oil is heated, crack 1 egg and pour it into the pan, ready to be scrambled.

Finally, turn the heat back on and lightly stir-fry everything together until well combined.

Finish with chopped green onions or more minced garlic for extra aroma, and a drizzle of sesame oil just before serving for a richer taste.
