Macaron Batter Ingredients

  • 80g Egg whites (chilled)
  • 80g Granulated sugar
  • 89g Powdered sugar
  • 89g Almond flour
  • Small amounts of food coloring (red, yellow, blue)

Cooking Instructions

Step 1

First, sift the powdered sugar and almond flour together 2-3 times. This prevents lumps and results in a smoother batter, leading to a sleek macaron surface.

Step 1

Step 2

In a bowl, add the chilled egg whites and whip on low speed to create some bubbles. Gradually add the granulated sugar in three additions while continuing to whip. Increase to high speed and whip vigorously until the meringue is stiff and glossy (forms firm peaks). Ensure the sugar is fully dissolved.

Step 2

Step 3

Once the meringue is formed, switch the mixer to low speed to break down any large bubbles and smooth out the meringue. Aim for about 80% stiffness. Over-whipping can make the batter difficult to mix later.

Step 3

Step 4

Add half of the sifted powdered sugar and almond flour mixture to the meringue. Using a spatula, gently fold the ingredients together by scraping the sides of the bowl, mixing until no dry powder is visible. Once the dry ingredients are incorporated, add the remaining mixture and continue folding. Be careful not to overmix, as this can deflate the meringue.

Step 4

Step 5

Once the batter is smooth and no dry ingredients remain, divide it equally into four separate bowls. Each bowl will be colored differently.

Step 5

Step 6

Add a small amount of your desired food coloring to each bowl. The photo shows adding 2 drops of red coloring. Start with a little and add more as needed to achieve the desired shade.

Step 6

Step 7

Once the color is somewhat incorporated, perform the ‘macaronage’ by spreading the batter against the side of the bowl and then folding it back onto itself. This process adjusts the batter’s consistency and creates a smooth texture.

Step 7

Step 8

Properly macaronaged batter will flow like a ribbon from the spatula, holding its shape briefly before slowly melting back into the rest of the batter. A slight sheen indicates it’s ready.

Step 8

Step 9

Repeat the macaronage process for the batter colored with yellow. (Example: 2 drops of yellow coloring)

Step 9

Step 10

Prepare the batter with blue coloring. (Example: 1 drop of blue coloring)

Step 10

Step 11

For green, mix 1 drop of blue coloring with 3 drops of yellow coloring. Adjust the amount of coloring based on your preferred intensity.

Step 11

Step 12

Transfer the finished colorful macaron batter immediately into piping bags. Using a plain round tip (about 1cm in diameter) works well.

Step 12

Step 13

Pipe the batter onto a baking sheet or silicone mat. The first shape is a ‘nut’ (bolt) shape, piped slightly elongated.

Step 13

Step 14

Next, pipe a ‘gear’ shape. While not in the MV, this was added to enhance the tool theme. Pipe around a base shape to create the gear teeth.

Step 14

Step 15

Now, pipe a smaller ‘bolt’ shape. Make it short and relatively thick.

Step 15

Step 16

Pipe an ‘elongated bolt’ shape. This is characterized by being longer than the nut shape.

Step 16

Step 17

Immediately bake the piped macarons in a preheated oven at 120°C (250°F) for about 15 minutes. Baking time may vary depending on your oven. It’s crucial to bake at a low temperature to prevent the shells from cracking.

Step 17

Step 18

Once baked, remove the macarons from the oven and let them cool completely on a wire rack. Handle them gently when hot, as they are fragile.

Step 18

Step 19

Store the completely cooled macaron cereal in an airtight container. It’s important to keep them away from moisture.

Step 19

Step 20

Enjoy these finished macaron cereals by pouring cold milk over them for a sweet and crunchy treat. Pairing them with whole almonds adds a delightful nutty crunch and enhances the flavor!

Step 20

Step 21

*Important Note*: As these macaron cereals are handmade without preservatives, they can become soft if left in milk for too long. To enjoy their crispiness to the fullest, we recommend adding them to milk just before eating!
