Colorful Tomato Doria for Kids

Tomato Doria is surprisingly easy to make! Its vibrant colors make it a delightful addition to your child’s meal plan. We used ‘rollable smoked duck breast,’ which is thinly sliced without skin, so there’s no waste, making it a convenient choice for kids’ dishes. My little ones don’t love excessive cheese, so I sprinkled just a little on top, and I ended up eating most of it myself! This dish offers a wonderful balance of flavors and textures that even picky eaters will enjoy.

Ingredients

  • 2 Ripe Tomatoes
  • 100g Sliced Smoked Duck Breast
  • 2 Bowls Cooked Rice
  • 1/2 Onion (approx. 50g)
  • 1/4 Carrot (approx. 40g)
  • 75g Mozzarella Cheese (1 pack)

Cooking Instructions

Step 1

First, prepare the smoked duck breast, onion, and carrot. Blanch the sliced smoked duck breast (about 100g) in boiling water briefly to remove any impurities. Finely dice half an onion (about 50g) and thinly slice or finely chop a quarter carrot (about 40g). Heat a little olive oil in a wide pan over medium-low heat. Add the diced onion and chopped carrot, and sauté until the onion becomes translucent. Since these are for filling the tomatoes, we’re using just the basic vegetables here, but feel free to add others if you like.

Step 2

Now, let’s prepare the tomatoes. Wash two ripe tomatoes thoroughly. Carefully slice off the top portion of each tomato. Using a spoon, gently scoop out the seeds and pulp to hollow out the inside. Be careful not to tear the tomato skin while hollowing it. One tomato will hold a little less than a child’s usual serving of rice, so you can set aside the extra rice to eat later or serve it alongside. The scooped-out tomato pulp can be finely chopped and added to the rice mixture for extra flavor.

Step 3

To the sautéed vegetables, add 1 tablespoon of oyster sauce and mix well to coat everything evenly. (Oyster sauce adds umami, but too much can make it too salty. Aim for just a hint of its aroma and flavor. If it tastes bland, a tiny pinch of salt or a splash of soy sauce can be added). Next, add one bowl of cooked rice to the pan. Increase the heat to high and stir-fry quickly to ensure the rice grains are well coated with the vegetables and oyster sauce. Firmly pack the seasoned rice mixture into the hollowed-out tomatoes. Finally, generously sprinkle about 75g (1 pack) of mozzarella cheese over the top. Since tomatoes release moisture, which can make the dish watery, it’s best to sauté with olive oil rather than butter. You don’t need to add eggs; the dish will be creamy and delicious as is. Bake in a preheated oven or air fryer at around 180°C (350°F) for about 10-15 minutes, or until the cheese is melted and golden brown. Your delicious Tomato Doria is ready!
