Egg Scramble Ingredients- 3 eggs
- 1 Tbsp cooking oil
- 2 pinches salt (for seasoning)
- 1 Tbsp cooking wine (for seasoning)
Pork Soboro Ingredients- 250g ground pork
- 1/2 Tbsp cooking oil
- 2 Tbsp cooking wine
- Pinch of black pepper
Pork Soboro Seasoning Sauce- 1 Tbsp minced garlic
- 4 Tbsp soy sauce
- 1 Tbsp fish sauce
- 3 Tbsp sugar
- 4 Tbsp cooking wine
For Assembling the Rice Bowl- 1 bowl cooked rice (approx.)
- A portion of seasoned spinach
- 250g ground pork
- 1/2 Tbsp cooking oil
- 2 Tbsp cooking wine
- Pinch of black pepper
Pork Soboro Seasoning Sauce- 1 Tbsp minced garlic
- 4 Tbsp soy sauce
- 1 Tbsp fish sauce
- 3 Tbsp sugar
- 4 Tbsp cooking wine

Cooking Instructions
Step 1
First, prepare 3 eggs. Crack 2 eggs into a bowl, and carefully separate the yolk from the remaining 1 egg, setting the yolk aside. (The yolk will be used as a garnish later!)
Step 2
If you wish to omit the yolk garnish for a baby soboro rice bowl, you can use just 2 eggs. In this case, you don’t need to use the white from the separated egg.
Step 3
Combine the 2 cracked eggs and 1 egg white in the bowl. Add 2 pinches of salt and 1 Tbsp of cooking wine, and whisk well. Adding cooking wine helps to eliminate any eggy smell.
Step 4
Heat 1 Tbsp of cooking oil in a pan over medium heat. Once the pan is sufficiently hot, pour in the whisked egg mixture. Using chopsticks, quickly stir the eggs to create soft, fluffy scrambled eggs.
Step 5
Turn off the heat when the eggs are about 80-90% cooked and still slightly moist. This will result in tender scrambled eggs with a beautiful yellow color. Transfer the cooked scrambled eggs to a plate and let them cool slightly.

Now, let’s make the savory and flavorful pork soboro. Prepare 250g of ground pork and gently pat it dry with paper towels to remove excess moisture. Heat 1/2 Tbsp of cooking oil in a pan over medium-high heat. Add the ground pork and stir-fry.

As you stir-fry, break up any clumps of meat with a spoon. Once the pork turns brown and is cooked through, add 2 Tbsp of cooking wine and a pinch of black pepper. Continue to stir-fry until the moisture has evaporated and the pork is dry and crumbly. This step helps to remove any gamey odor and enhances the nutty flavor.
Step 8
It’s important to stir-fry the pork until it’s dry and crumbly, similar to how you would cook fried rice. This ensures that the soboro won’t be mushy when placed on top of the rice bowl.
Step 9
Once the pork is thoroughly stir-fried, turn off the heat temporarily and prepare the soboro seasoning sauce. In a small bowl, combine 1 Tbsp minced garlic, 4 Tbsp soy sauce, 1 Tbsp fish sauce, 3 Tbsp sugar, and 4 Tbsp cooking wine. Mix well. A delicious stir-fried pork soboro sauce is now easily ready!
Step 10
Pour the prepared seasoning sauce into the pan with the pork. Stir continuously to prevent burning as the sauce thickens and coats the pork.
